Biscuit roll with Muubi cream and jam

For the sponge, beat the eggs with the sugar. When the mixture has tripled in volume, gradually add the flour and lemon zest. Bake at 180°C for 10 minutes. Check for doneness with a toothpick. Once cooled, spread the jam and cream on the sponge and roll up. To make the cream, whip the butter with the Muubi until fluffy.

Sponge layer:

6 eggs
Flour 6 tbsp
Brown sugar 6 tbsp
Lemon zest 1 tbsp

Cream:

Muubi 200 g
Butter 100g
