Eclairs with Muubi caramel cream

Preparation:

First make the dough. Heat the milk, water, sugar, salt and butter in a saucepan. Remove from the heat and add the sifted flour, stirring well. Cook for another 1-2 minutes, stirring constantly, until the mixture forms a ball. Allow the mixture to cool and stir in the eggs, one at a time. The dough should be shiny. Using a piping bag, press the dough onto the baking paper to form long rectangles. Bake in the oven at 180°C for 25-30 minutes until the eclairs are cooked through. When cool, fill with a mixture of Muubi and cream. Decorate with melted chocolate and crumbled nuts.

Sugar 10 g
Butter 80 g
4 eggs
Pinch of salt

Filling:

Muubi 4 tbsp
Cream 200 g

Garnish:

Milk chocolate
Crumbled nuts
